They consume oxygen and produce carbon dioxide, which increases carbon dioxide levels and decreases oxygen levels. Using a highly permeable membrane, oxygen can be supplied and carbon dioxide removed by exchanging the packaging gas with the atmosphere. Certain equilibrium concentrations of gases in the package are achieved when the air permeability is equal to the respiration rate of fruits and vegetables. Then, without anaerobic respiration, fruits and vegetables can sustain a weaker respiratory rate.
